Participants of the monthly cooking demonstration at the Oatman House Tea Room came away with more than three very different and innovative soup and chowder recipes Thursday. "I never heard of nitrate-free bacon," said Mary Ann Gray of Collinsville about a chowder ingredient used in the class. "I also didn't know about the shelf life of bottled herbs -- I bet I have some that I have to pitch."

Bernadette Rolley of O'Fallon recently planted an herb garden and on Thursday night, she learned a few tips on how to use those freshly grown herbs in her cooking. "I am trying to broaden my horizons and season things without fatty sauces," she said.
